An Atomic Meatloaf Meltdown Sandwich? Sounds perfect for prime time.
The sandwich - a favorite at Cambridge joint All-Star Sandwich Bar - gets its 15 minutes of fame at 10 p.m. tonight in an episode of the Food Network’s “Meat and Potatoes.”
Apparently show host Rahm Fama called chef Johnny Diamantopoulos’ meatloaf “the perfect balance of sweet, savory and spicy.” Sorry, we may have to interrupt this blog post to go out for a sandwich……
If you miss tonight’s episode, don’t worry. We’ve got the recipe for the sandwich below. And it’s good to note that All-Star (1245 Cambridge St.) has new eats on their summer menu. We got an early glimpse and although they all sound worthy of their own reality shows, we’re particularly curious about a cornmeal fried green tomato sandwich that comes with fresh mozzarella cheese, sweet corn and collard chow chow and pesto goat cheese remoulade on grilled focaccia. Delicious.
Atomic Meatloaf Meltdown
6 oz. meatloaf (see recipe below) salt and pepper
Sautee the onions, garlic and celery in oil until tender. Remove from heat and cool. In a large bowl, soak the bread crumbs in the liquid. Add the sautéed vegetables, meat, eggs and remaining ingredients. Don’t over mix. Form into 2-3 loaves in a roasting pan or in loaf pans. Roast at 350 degrees about 1 hour, or until the core temperature is 155 degrees. Remove from oven and cool.
